Precision and Patience: The Art of the Cast Net Harvest

Shrimp School
June 23, 2025
to a casual observer, a shrimp harvest might look like a simple task of throwing nets into a pond. But for a farmer, this is the most critical moment of the entire season. It is the culmination of months of hard work, where science, tradition, and careful timing finally intersect. In the sixth episode of Shrimp School, we go ringside to witness the Cast Net Method: a hands on approach that prioritizes the quality of every single shrimp.

Setting the Scene for a Calm Catch

A successful harvest actually begins before the first net ever touches the water. The goal is to keep the shrimp as calm as possible to ensure the meat stays firm and high quality. Farmers start by gradually lowering the water levels.

Next, the paddle wheels: those iconic splashing machines: are turned off. This stops the circular current and creates a quiet, still environment. Without the flow of the water, the shrimp naturally move toward the center of the pond, gathering in a predictable area without feeling the stress of a chase.

The Rhythm of the Cast Net

Once the pond is prepared, the farmers step into the water. This particular harvest uses the cast net system, which relies on human coordination rather than heavy machinery. Farmers work in a steady rhythm, dragging long nets across the pond floor.

Every step is deliberate. By moving slowly and steadily, the team can collect the shrimp gently. This manual precision is vital because it prevents the shrimp from crowding or crushing one another, which is a common risk in more aggressive, high speed harvesting methods.

Sorting for Excellence

The work doesn't end when the nets come out of the water. Speed is essential to maintain freshness, so the sorting process begins immediately right by the pond bank. The shrimp are quickly separated by size and weight while being kept meticulously clean.

Handling the shrimp with care at this stage ensures that the delicate shells remain intact and the texture stays perfect. It is a transition from the biology of the pond to the logistics of the kitchen, and every second counts.

When you see a plate of beautiful, uniform shrimp, you are seeing the result of this patient, rhythmic process. It is a day where precision meets passion, bringing fresh seafood one step closer to your table.
